Ingredients:
- 4 Philly Gourmet® Beef Patties
- 1/2 cup mayonnaise
- 1 tablespoon chipotle peppers in adobo sauce, minced
- 1 tablespoon olive oil
- 1 small red onion, cut into 1/4-inch slices
- 1 small red bell pepper, cut into 1/4-inch slices
- 1 small yellow bell pepper, cut into 1/4-inch slices
- 1 small green bell pepper, cut into 1/4-inch slices
- 1 tablespoon taco seasoning
- Kosher salt and freshly ground black pepper, to taste
- 4 slices pepper Jack cheese
- 4 potato sandwich rolls, toasted
- 2 avocados, halved, pitted, peeled and sliced
- 1/4 cup sliced pickled jalapenos
Let’s do it…
- Combine mayonnaise and chipotle in small bowl. Set aside.
- Heat oil in large skillet over medium heat. Add onions and pepper, and cook, stirring occasionally, until light golden-brown and tender, about 4-5 minutes. Season with taco seasoning. Transfer to plate and set aside.
- Season patties with salt and pepper. In the same clean skillet or grill, cook patties according to package directions. With about 1 minute remaining on cook time, top patties evenly with cheese.
- Spread chipotle mayonnaise evenly over both sides of rolls. Top bottom rolls evenly with patties, peppers and onions, avocado, jalapenos and top rolls.
