Cheesy Chicken Quesadillas

This Cheesy Chicken Quesadilla doesn’t believe in holding back. Tender Philly Gourmet Shaved Chicken Breast gets cooked up with golden garlic and onions, then tucked into a warm tortilla with black beans, sweet corn, fresh tomatoes, peppers, jalapeños, and a generous snowfall of melty three-cheese blend. Fold, sizzle, and crisp it to golden perfection, then slice it into wedges that are basically just a delivery system for salsa, guac, and sour cream. It’s cheesy, messy, and fully committed to party mode.
Ingredients:
- 1 Pack 12oz. Philly Gourmet Shaved Chicken Breast
- Tortillas (Burrito Size)
- Mexican three-cheese blend shredded cheese
- 1 can black beans
- 1 can whole kernel corn
- 2 large tomatoes diced
- 1 red bell pepper
- Jalapeños
- Fresh cilantro
- 2-4 cloves garlic
- 1 Onion
- Fresh salsa
- Guacamole
- Sour cream
Let’s do it…
- Dice up tomatoes, bell pepper, jalapeños and onion, crush garlic. Set aside.
- Add small amount of oil to frying pan on medium heat and add onion and garlic along with Philly Gourmet Shaved Chicken breast and cook until chicken is done and onion and garlic are golden brown.
- Heat another large frying pan to medium heat. Once hot, spray pan with light coat of oil and lay first tortilla flat in the pan.
- On one half of first tortilla, spread first serving’s portion of chicken, onion and garlic, beans, corn, tomatoes, bell pepper, jalapeños, onion and cilantro. Coat the chicken and veggie blend with cheese and fold over other half of tortilla to cover.
- Cook both sides of quesadillas on each side for 2 minutes so the cheese melts and tortillas are golden brown. Be sure not to let the tortillas burn!
- Remove from pan and use a pizza cutter to cut into wedges. Enjoy with fresh salsa, guacamole, sour cream… party time!
