Steak & Egg Skillet Breakfast Sliders

Breakfast, stacked. These Steak & Egg Skillet Breakfast Sliders layer tender Philly Gourmet Shaved Steak, fluffy scrambled eggs, and melty white cheddar onto toasted buns, then bring the whole thing to life with smoky chipotle mayo and sweet sautéed peppers and onions. It’s hearty, a little messy, and exactly the kind of upgrade that your morning routine needs.
Ingredients:
- 2, 10 oz. packages Philly Gourmet® Shaved Steak
- 1 tablespoon olive oil
- 1 green bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 6 slices white cheddar cheese
- 6 large eggs, whisked
- Kosher salt and freshly ground black pepper, to taste
- 12 slider buns, sliced in half horizontally and lightly toasted
- 1/2 cup mayonnaise
- 2 teaspoons chipotle in adobo sauce, finely chopped
- 1 teaspoon adobo sauce
- 1/4 teaspoon garlic powder, optional
Let’s do it…
- Heat oil in a large skillet over medium heat. Add peppers and onions and cook until softened and lightly caramelized, about 5-7 minutes. Remove from skillet and set aside.
- Increase heat to medium-high. Add shaved steak cook, pulling apart with a wooden spoon or spatula, until golden-brown and thoroughly cooked, about 3-4 minutes.
- Top evenly with cheese, and remove from skillet and set aside to keep warm.
- Reduce heat to medium-low. Add eggs to skillet and season with salt and pepper. Cook, stirring gently, until soft scrambled and just set, about 3 minutes.
- Combine mayonnaise, chipotle, adobo sauce and garlic powder in a small bowl until smooth.
- Spread chipotle mayo on bottom half of slider buns. Top with scrambled eggs, steak and cheese, sauteed peppers and onions and top buns, and serve.
Tip: To reheat, place assembled sliders to a skillet or baking dish, cover loosely with foil, and heat until everything is warmed through, about 3-5 minutes at 350°F.
